Actually, since there are many players, you need the plural possessive - it should be players'.
If you're going to be pedantic, at least make damn sure you're right.

I don't believe you can use the plural form of "player" in that sentence. An alternative would be to rearrange the sentence like so:

I thought editing the wiki was the job of all players.

while you certainly can rephrase to get rid of the possessive there's nothing wrong with using players' as far as i can see.

I believe you could use either if you creatively decide where to bind the determiner. The most natural parsing of the sentence is:
(a player)'s job. = the job belonging to a player.
where player must be singular because it uses 'a' as the determiner. But if you parse it considering 'players'' as an adjective describing the 'job' then you could use:
a (players' job). = a job belonging to players.
