I'm with you in that Ubuntu is THE most noob friendly distro that I have run across, personally though I stick with Debian for my preferance. I do recommend Ubuntu to anyone who asks, and personally you have to pay me to work with FC or RH.

http://www.linuxreality.com/ is a great podcast for new linux users, i've almost finished all the episodes and it explained alot of the basic things for me.
The first episodes is a general intro to linux and explains about the different distros and walk you thruogh some live cd's so you can try linux before installing it.
Personally I wouldn't be doing enough with linux just from the live disk, even though it can do almost the same as a full install I didn't find all the nifty little things untill I got it installed and used it on a regular basis.
