According to the docs, only Fighters can attain Master Artisan level in either of the weapon crafting tradeskills.
Why can't Weapon Masters acheive it as well? It seems to me that being able to craft a weapon would fit in perfectly with their intention (i.e. being masters of a weapon).

I agree, in fact I think it would be great if weaponmasters could make slightly different weapons to everyone else but only in their weapon of choice. This is in contradiction with the documentation on Crafting:
If you have levels in Assassin, Blackguard, Cleric, Divine Champion, Dwarven Defender, Dragon Disciple, Paladin, Palemaster, or Shadowdancer, the maximum craft level you can attain is Craftsman (Level 3) in any Tradeskill (these classes have significant other duties to perform or skills to practice).
I know, it doesnt state Weapon Master, but I suppose they also have a lot of duties to perform and skills to practice.

It isn't that Weapon Masters cannot make Master Artisan, it is simply that their intense study into a specific weapon will not hinder their studies in crafting, but won't help them either.
You pretty much have to have 19 levels of fighter in order to craft master artisan weapons or armour. Though, I do concur that having a weapon master at least be able to craft a slightly better weapon of choice would be ideal. Who better would understand the perfect balance needed?
To that respect, I don't think that a 19 fighter/1 weapon master should be granted this either. Quite possibly a 19 fighter /10 weapon master would be more appropriate. It isn't until 7th level WM that you truly begin to harness the FULL power of the weapon anyways. What's another 3 levels for a nice round number? Or you could just leave it at 7 levels WM and 19 levels fighter. This would GREATLY benefit me since I have a 17 fighter/7 weapon master wielding a [censored] sword... So, I'm just RIGHT THERE. Of course I chose a [censored] sword. With so much slash resist that kind of was a bad idea for this server. But, now that they've added some nice new [censored] swords in the epic areas (I have the acid one currently) I've stashed my imbued mithril for now. Though, you know the first chance I get with this character I'm crafting a silvery one.
