Scripts are the "in the background" mini programs if you will that determine how the module is running.
Examples:
A script controls whether you can be a specific race for a specific faction.
A script controls what DC a lock is to open and what type traps.
A script controls the stores and NPC's that run then.
A script(s) runs the creature AI.

As a player, you won't literally see any scripts. The designers of the game and the particular module (e.g. Neversummer) create the appearance of the world, along with how the world behaves. This behavior is controlled primarily through scripting. As a player, your actions will cause certain scripts to run and you will see the effects of those scripts without ever seeing the script itself. For example, when you cast a spell, a script is run that describes the effect of the spell (the script is responsible for the visual effects and whatever it does to your character or enemies or whatever).
The developers write the scripts. The players run the scripts. If all you ever do is play the module you don't even really need to know that there are scripts at all (knowing what is controlled by scripts does let you know what kinds of things the developers might have changed, such as the effects of spells or the way shopkeepers work).
